The opportunity
Our client is an established, multi-property all-inclusive resort group on Jamaica’s north coast, known for gourmet dining as a core part of the guest experience. The Garde Manger is responsible for the resort’s cold kitchen, from salads and appetisers through to charcuterie, buffet displays and decorative food presentation, and plays a genuine role in how the kitchen’s standards come across to guests.
This role suits a chef with a real eye for presentation and precision, who takes pride in the cold section as its own discipline rather than a stepping stone to be rushed through. It’s a good fit for someone looking to specialise and build a strong foundation in a busy, multi-outlet kitchen.
What you will be doing
• Preparing and presenting cold dishes, salads, appetisers and charcuterie across the resort’s dining outlets
• Designing and maintaining buffet displays to a high visual standard
• Ensuring consistency, freshness and presentation across all cold kitchen output
• Managing stock, ordering and portion control within the cold kitchen section
• Maintaining strict food safety and hygiene standards, including HACCP compliance
• Working closely with the Executive Chef and Sous Chef on menu planning and special events
What you will need
• Proven experience as a Garde Manger, Pantry Chef or similar cold kitchen role within a hotel, resort or high volume kitchen
• Strong knife skills and food presentation ability
• Solid understanding of food safety and hygiene standards
• Recognised culinary qualification
Experience within a Caribbean all-inclusive resort or multi-outlet dining environment would be an advantage but is not essential.

The practical detail
This is a busy, high volume kitchen environment with shift and weekend work as standard. Work permit sponsorship for non-Jamaican candidates is subject to local labour market processes, so timelines can vary.
